Limes and avocados – a match made in nutrition heaven!
Limes are an excellent source of antioxidants. Creamy Lime Avocado Pie
Crust
- 1/4 cup shredded unsweetened coconut
- 1/2 cup chopped pecans
- 1/2 cup pitted dates (about 12)
- 1-2 tsp lime juice
- pinch of salt
Pie Filling
- 2 avocados
- ¼ cup lime juice
- 2 tbsp raw honey
- 1 tbsp coconut oil
- 3 scoops Dynamis white chocolate protein powder
CRUST: Use a food processor or ninja blender to mix all ingredients for the crust. Press into a 6-inch springform pan, put pan in the freezer while you make the filling.
FILLING: Blend all ingredients for the filling in a blender until creamy. Pour over the crust into the pan and smooth out with a rubber spatula. Place back in the freezer to set, at least 3 hours. When ready to serve, take out of the freezer and let sit for 5 minutes before cutting. Store leftovers in freezer.
