Ingredients:
1/3 cup cooked pureed beets (mashed up well or blend with the other wet ingredients before adding dry ingredients)
1/3 cup coconut oil, softened
1/4 cup coconut sugar
1/4 cup raw unpasteurized honey
1/2 tsp apple cider vinegar
1 tsp vanilla extract
1.25 cup quinoa flour
1/2 tbsp aluminum-free baking powder
2 tbsp cocoa powder
1/2 cup dark chocolate chips
Directions:
Mix all ingredients well and drop onto lightly sprayed cookie sheet, bake at 350 for 8-10 minutes. Let cool completely before eating. Makes about 2 dozen 2 inch-sized cookies.
