Who says pancakes are only for breakfast?! These dense and moist pancakes make the perfect afternoon snack when you’re crunched for time or can’t find proper protein-rich snack food around.
And the best part is, they are super quick and easy to make. The only thing you’ll want to be sure to do is use the right protein powder.
We’ve tried dozens of protein powders over the years in different cooking and baking recipes, and without doubt a whey isolate works best for a fluffy and moist texture. Easiest Protein Pancake Ever
This is the easiest protein meal/snack to make! And it makes for a tasty cold to-go snack too. Make a large batch and then store in single serving sizes in ziploc baggies in the freezer for quick grab & go snacks.
- 1/2 cup Quick Oats
- 1/4 cup Vanilla Protein Powder ((1 scoop))
- 2 eggs ((whole eggs))
- 1/2 cup egg whites ((1 egg white = 1/8 cup))
- 1 tsp cinnamon
- 1 tsp coconut oil ((or spray, for cooking in))
- 1 tbsp maple syrup ((optional))
- Put all ingredients into your blender or magic bullet and mix well.
- Spray a small 9″ frying pan with non-stick oil spray and heat up, pour half of mixture in. Cook on each side on medium/high heat for about 3-4 minutes, until golden brown on each side.
