Peach Oatmeal Muffins
Nothing says warm, fuzzy love like home baked muffins. These super easy ones are made with common ingredients that are usually already in your pantry – add some fresh or frozen peaches, and you’ve got a delicious and healthy snack that everyone in the family will love!
- 1 banana
- 2 egg
- 1 tbsp maple syrup ((or to taste))
- 1/4 cup water
- 2 tbsp flax seed ((ground))
- 1 cup quick oats
- 1/2 cup oat flour
- 1 tbsp chia seeds
- 1 peach ((pit removed, chopped))
- 1/2 cup protein powder ((optional, 1/2 cup = 2 scoops))
- Preheat oven to 350 degree. Spray your tin muffin pan or use a silicone muffin pan.
- Mash banana with fork or potato masher, add eggs, maple syrup, and water, whisking until well combined.
- Make your own oat flour simply by putting quick or rolled oats into your magic bullet or ninja blender and grinding up fine. Measure once the oat flour is ground (rather than from whole oats).
- Add the oat flour, oats, ground flax and chia seeds.
NOTE: slightly reduce the oat flour if using protein powder (optional to increase the protein value of your snack and help balance blood sugars, support muscle growth, and weight management).
- Add optional protein powder and combine all.
- Stir in the chopped peach.
- Scoop batter into each muffin cup. Bake for about 15 minutes until toothpick test shows readiness.
Toothpick test: stick a clean toothpick down into the middle of your muffin. If it comes out clean, they’re done! When they’re not quite ready yet, there’ll be a little batter adhere to the toothpick.
- Let cool completely before diving into them!
