
Other than being super yum, these Strawberry Oatmeal Cookies can help you recover from a hangover!

These cookies are rich in several of the nutrients we know are significantly depleted with excess alcohol consumption, making them not only a tasty hangover snack, but one that’ll help replenish the body and get you back to feeling good!
Ingredients:
- 1 cup quick oats (complex “stick-to-your- ribs” carbs, rich in magnesium)
 
- ¾ cup almond flour (vitamin E antioxidant)
 
- 1.5 tsp baking powder
 
- 1 tsp cinnamon (blood sugar regulating, anti-inflammatory)
 
- 1/8 tsp salt (replenish electrolytes)
 
- 2 tbsp coconut oil   (anti-inflammatory, hormone regulating)
 
- 1 tsp vanilla extract
 
- 1/3 cup honey (replenish glucose energy)
 
- ¾ cup frozen or fresh strawberries, diced (highest in vitamin C)
 
Directions:
- Mix together the oats, flour, baking powder, cinnamon and salt.
 
- In a separate bowl, whisk together the coconut oil, egg and vanilla. Then stir in the honey.
 
- Combine the two bowls of ingredients and mix just until combined. Add the diced strawberries.
 
- Drop by spoonful onto a parchment paper lined cookie sheet, don’t flatten them.
 
- Bake at 325 deg F for 15-20 minutes. Cool for at least 10 minutes before diving into them!
 
- Recipe makes about 10 cookies.
